Hi, Janet.
I'm guessing from your message that you are probably about my age... somewhere in your 30s. (My clues are that you said "all kinds of music" and you don't quite seem to write like you are in your 20s.)
I have lived in Sydney in the past. I would recommend starting with the Sydney Opera House. As an outsider, it might seem like the equivalent of going to Times Square in NYC or Fisherman's Wharf in San Francisco, but it's really not. It really is quite amazing, even if you are not a huge fan of opera or classical music.
As far as the museums, I personally think the world of The Australian Museum, which is a natural history museum. It has an interesting twist on science museums and I loved it every time, and I went frequently.
Well, that's a start, as basic as it might seem. I found that the food was wonderful in Sydney, and familiar enough so I didn't really miss American all that much.
