Our daughter lives in Brisbane and we have a few housesitting assignments there.

How long can we stay there without having visa/travel issues?

Depends on the type of visa & what passport you are travelling on. Best to check out the govt website www.immi.gov.au for visa information.
Just remember that this house sitting may be seen as working even though you are not getting paid for it.
