I would really like to be able to work out of the container while I build-- to have some security of the materials. Does anyone have experience with this? Should I buy a container? or can one be rented? What are the best shipping companies to work with? What are all the associated fees that I should expect?

Do not expose anything that is not too heavy or to big to carry, because it will get feet. You cab buy a container with the freighters. We did that a few times already. To unload your materials, you will get a few days, afterwards they charge rent.
