I have family in Salinas and visit the area at least once a year.
From about November through May the days are typically hot (high 80s) and sunny, while the nights cool down to the 60s.
June through October is "winter" there. The weather tends to be about 15 to 20 degrees cooler than during the warmer months. It is also more likely to be overcast, but doesn't rain much, which is nice since the cooler tempatures are perfect for outdoor activities.
I don't know if you plan to spend much time in Guayaquil. The tempatures run as much as 10 degrees warmer there than in Salinas, since you don't have the benefit of catching lots of ocean breeze, like you do on the pennisula.
