I am looking to move to Correze to semi retire, rent out a holiday let and look after dogs for people going away. Do you think this a a good idea and viable propostion?

Hi Alison,
If you're serious about this idea, and expect to live off the income it brings, you should really do some research on the market and the margins. Go to Correze, talk to people in your target market, see what the costs are and what prices you could charge. I know it's not very sexy advice, but that's the only way you'll know if it's viable or not ahead of taking the leap.
