As both an Israeli and American citizen who has lived in both countries for a period of time and is now back in Israel, I guess I can answer this question not so much from the perspective of what I wish I had known but what I wish to convey to others coming to the country.
The one thing is that Israelis tend to "take the path of least resistance", especially when it comes to governmental bodies (like social security, healthcare, etc) That means that they will try to find the easiest solution and will tell you they know something when they don't just to get it over with.
Having said that... if you push them to go all the way and do something in a manner of quality, they usually will. It doesn't stem from laziness but more of a need to get something done as quickly as possible.
