One week is barely enough time to get over the jet lag. As has been suggested, if you've never been to Italy, pick one city and spoke. I would pick Florence in any season but deep summer. It gets hot there. However, for the novice, it's the place to go. The city itself will not get old in a week but it also has Tuscany all around it. Places like Siena and Chianti. I would rent an apartment (alla airb&b) in the center of town, as near as possible to the Cathedral, so that you don't waste anytime in the periferia. I would also rent a car on a daily basis when traveling outside the city. Tour busses could be nice but I don't enjoy spending hours waiting for old Americans and Germans to get their acts together. I'd rather have a good travel book in hand and the freedom to pick a direction. Best to use serendipity for eating. You could seek out those special restaurants on occasion, but most of the time if you see a place that looks good, it probably is good. Just avoid the tourist food places near the tour bus stops.
