Dual Citizen (USA-Ireland) Ideas

Hello all!
I'm a New Yorker planning on full retirement in about 2 years (I am 55.) I do have the advantage of EU citizenship and I already receive a pension from NYC (retired NYPD.) Eventually this will be supplemented by SS and drawdowns from my IRA's.

I plan on traveling to Central/South America and Europe to explore retirement options. I love to sea (not whitewater) kayak and hike and of course enjoy dining and wine as much as anyone!

I have been to Ecuador (Cuzco) and Brazil (Recife) and have Colombia and Chile on my wish lists.

For Europe I have been to Paris, London, Gothenburg, Stockholm, Geneva, Chamonix and Zermatt. Croatia, Spain and non-Parisian France top my wish list for now.

Does anyone have any ideas of which places I should visit first? Any why?

I don't plan on spending my retirement fully idle, I'd love to get into a part time position or even my own small business. Can anyone advise if EU citizenship is more advantageous than US when it comes to Central/South America?
