planning on taking the expat plunge. Need advice where to go with best outdoor recreation opportunities

My husband and I want to leave the US for a country rich in a variety of outdoor recreation, culture and community. We can leave now on a $1500/month budget if we choose not to work abroad. I speak little Spanish, but would love to learn and speak any language fluently. We also don't have kids. Are there any magical places out there? Any advice on how to just give everything up and leave? Any regrets?
