My wife is a Panamanian citizen but I do not yet have residency. She is going to try to open a bank account next month. Can she add me as an owner or does that cause problems? Also, from reading old posts, it sounds like FACTA complicated things. Any recommendations for opening a new bank account in PC today? Online banking is key. Thank you!

Depending on the bank, in most cases, you have to be a resident of Panama or in the process, to be an owner of a bank account. There are a few banks and credit unions where that is not a necessity. FATCA has indeed had an effect on how banks operate with foreigners. Your wife should have no problem, and you can be beneficiary, but probably not a signer or owner.
