I am interested in traveling one way to Columbia then Equador and end up in Peru before flying back to the states. I need to know if I can enter any of the 3 counters without return plane ticket?

I have entered Peru three times and Ecuador once. No one ever asked about return plane fare. I understand it is a possibility but I've never run into it.

I also have never ran into this issue. you can cross the border in many places by bus, walking etc. so why bother. besides if you over extend its only 1 dollar a day for your over extention
