Begin with Buenos Dias (tardes, noches). It's amazing the difference that can make. I learned one morning when I got a surly cup of coffee in Madrid -- I had failed to simply greet the guy in the cafe. One thing that Makes Spain so enjoyable is that people take the niceties of life seriously. It makes every-day interaction so much more pleasant if you attend to details such as a decent greeting, decent clothes, taking a little extra time with people, etc. If you start a conversation with "Buenos dias", then you'll immediately fall into the rhythm, and people will respond in kind.
