It would take a book to answer all of the questions so I will refer you to my website www.nicaragua-guide.com. Also, the Moon books on Nicaragua are excellent and are up to date this year.
Not sure where in Nicaragua you are referring to but in Granada there are many fine hotels such as Hotel Casa San Francisco or Bohemian Paradise. For hotel info you might try www.vianica.com.
We like all of the food here and everything is available, especially great chicken.
Not many mosquitoes this time of year but a recent cheap tip is to use Listerine mouth wash, the regular kind without flavoring. Just apply it and it does not have the unpleasant odor of the various repellents.

Thank you so much for the tips. We'll be in Managua the first week then keeping options open for travel after that. I was born in Corinto and my mother grew up in Jinotega so those are two stops and Granada for sure!
