Panama: Making wine and beer:
Bill, we should talk. I've made a few batches now and there are a surprising number of people down here who are into homebrewing. It's challenging to get started but definitely not impossible.

Panama: Quick tour:
I spent 3 weeks in Panama City in March. Here's my suggestion. Get a cab from the airport to Via Argentina. Shouldn't be much more than 5 bucks... Just settle the price BEFORE you go anywhere - they'll probably try to gouge you. There are lots of restaurants on this strip and I understand lots of expats live in the area - it feels very multicultural. Just walk around and get a feel for it, maybe get dinner at this Cuban place called El Rincon Habanero. There's a good pub up the road called La Rana Dorada, but it is pretty gringo. Great beer selection though. After dinner, get a cab to Casco Viejo, the old part of the city. Again walk around and get a feel for it. There are plenty of nice bars and restaurants around there. It's an interesting combination of fancy and decrepit - the whole district is going through a renovation. I'd stay at a hostel in Casco called Luna's Castle. Keep in mind this is a budget place with lots of backpackers, so if you're not into the hostel scene you may want to look elsewhere. The next morning I would get up early and walk around the bay. Theres a good strip for walking along the water. If you're feeling ambitious you could walk up Ancon Hill before your flight, which will give you a good view of the city. On second thought, it may be better to have a cab drive you up there and take you straight to the airport after.
My final advice, if you do a lot of walking at night, is just to be careful. We didn't run into any problems when we were there, but be aware of your surroundings. And be prepared for traffic to/from the airport. Don't want you to miss your flight (though it probably won't leave on time).
