There are tons of options here in Manta... You could try to room with someone, or you could get a hostel; there are tons of them here. Finding a place would not be a problem if you just decide to ¨show up.¨

I have seen lots of older people flying LAN. I don´t think you would have any trouble with them. Are they more senior friendly than others? Not sure.

I second that Keylime... The ATV´s for rent are way underpowered. In all fairness, for what they are, they are loud!
The good news is you can find Honda and Yamaha dealers in GYE... I´m not sure if they stock them, but I´m sure you can order a ¨more proper¨ ATV if you have the cash.

No. Ecuador gives passport holders from just about every nation (or every nation) a 90 day visa upon entering.

If this is your first trip to Manta I highly recommend using "Rena Del Camino" from the bus terminal in GYE. They provide non-stop service to their own small bus station in Manta.
The cost is $5.00 per person plus 0.25 cents for the "terminal tax."
I travel from Manta to GYE almost every weekend and always use their service.
Another option would be Manta Express.... I've never used this service, but have heard (outside of the vans being a bit crowed), they provide great service. Sorry but I don't have any more details about Manta Express... If you need them let me know and I'll find them for you.
