Get Married in the US and then you have a real record of a Marriage.
I live in Honduras and was running all over trying to get it to happen.
I went to Belize.....3 days later I'm Married.
Then get it Authenticated at the Minister of Foreign Affairs for Belize then the Embassy of Honduras to have it legal in Honduras..
The Marriage in the US needs to be Apostle stamped by the Secretary of State to make it Legal in Honduras.
That is another option.

I have driven to Honduras twice.
I have had zero problems both times
I would do it again with no problem.
Best advice is drive the Pacific Coast side of Mexico.
Use the( quoata ) Toll Highways as much as possible. Safe and you have the "Green Angels" for any problems you may have with your vehicle. Patrolled by Federal Police who I found to be highly professional Officers.

Honduras: driving v shipping or leave it all behind?:
I have driven South to Honduras 2 times. The last in 2010.
Both times I brought a vehicle and personal items.
The trick is to just bring personal items that you could not replace.
Beds and furniture can be purchased in Honduras.
It is a great drive South going down the Pacific Coast Route.
Honduras: Expats in San Pedro Sula for moving advice:
I would stay clear of San Pedro Sula as a place to live. It has the Highest Crime rate of all Honduras at the moment.
I know the City of Siguatepeque has lots of Expats and services for your needs in having children.
I only go to San Pedro Sula for Business other than that , I stay clear and travel to Siguatepeque for most the things I need to get.
Honduras: Holy Week in Gracias Lempira.:
Spent 3 days in the small ancient town of Gracias Lempira.
Was real fortunate to see a procession that is done there every year and has for hundreds of years.

Honduras: Education & Healthcare:
There are both in Tegucigalpa.
The American School there is awesome. And there are too many good clinics to be able to post.
My advice would be to take a vacation there and check it out for yourself. Then you can see if you want to make such a move.

I have driven down from the Pacific Northwest 2 times. Had zero problems till the Guatemala Border. They are real crooks. The Tapacula Guatemala Border. The rest of the Borders are fine. Travel the Pacific Coast side and you will have a fun trip. Real Beautiful drive. Hot is what you want, North Coast can get that way.
