Nicaragua: Goats In country?:
We had goats in Costa Rica and they did not eat brush nor did they clear land. Milk and cheese was good, but thieves will look for some good fat ones especially around the holidays.
Goats are not native to either Costa Rica or Nicaragua so have to be vaccinated.
Psst ...don't plant any trees near the goats.

Nicaragua: Caribbean Side?:
wanewbee, you should check out the legality of arriving in your dingy and import/mooring your 'live aboard' when not a legal resident. Also it isn't safe to leave your boat 'unoccupied'. When we stayed there a friend encountered many problems.
Costa Rica: Random rookie questions about moving to CR:
Make sure if you get good internet speed if you are intending to do business. Be sure to get a home in a secure area if you have to leave regularly as it will be noticed and you could return to an empty nest. Most here get someone to house sit, even when only away overnight. or out for the day.
