The upstairs was designed to have a natural feel with tropical hardwoods and Belizean slate and was to be a retail center and event space. Some of the upstairs furniture evokes the Belizean natural feel with logwood furniture. Both the upstairs and downstairs have restrooms that were designated for staff use.
The kitchen entry from the garage has a two-door antechamber (so outside air does not come in from the garage) with a sink for ultimate sanitation. A sloped porcelain tile floor with three floor drains and tiled walls facilitate easy cleanup. Equipment includes gas range, exhaust vent, three-compartment sink, a hand washing sink, several refrigerators and freezers, and a commercial ice cream maker. The kitchen waste water system includes a grease trap and designated septic system. The kitchen is cooled by two 1-ton air conditioners and positive air pressure is obtained by an air purification system that pumps in fresh air from outside. A deck could be added to the kitchen beach-side entry to facilitate ground-level food service.
