My first visit to Cuenca Dec. 2021

Hi folks - I'm Brian, 65 and a rural Maine resident. I've been reading about and researching Cuenca and vicinity for years. I would like to make my first visit Dec. 2021 to the end of February 2022, so 3 months. As an independent and resilient traveler, Cuenca looks very manageable. The climate is perfect for me - never too hot or too cold. The one aspect of life there that worries me most is the noise level. I have heard Cuenca can be extremely noisy. Is this true throughout the city or are there known quiet neighborhoods where things are calm, especially at night? I was in Portugal and Spain in 2019 and the ever-present barking dogs were a daily irritant.
I'm studying my Spanish again and look forward to interacting with the locals. I spoke some Spanish as a kid when my family lived in Puerto Rico for five years, so I have some familiarity.
I'd like to find a cheap, furnished rental for the 3 months I'm there, so any hints or tips on that would be greatly appreciated! Doesn't have to be near El Centro.
Another concern: I'm a medical marijuana user and wonder about availability in Cuenca. Any insights on that would be greatly appreciated.
I'm low-key, friendly and love meeting all kinds of people, not just other Americans. I look forward to hearing from y'all!
