Descaling fish

So bought a huge fresh salmon filet from Tienda Inglesa today. although probably frozen when the store got it. Asked that the guy scale it and he starts to remove the skin! Oh no... that is the best part! so I explained, “just remove the scales please.”

He acted like he had never heard of such a thing and anyway they don’t do that! I on the other hand had never seen a fishmonger not scale a fish if asked... took me forever and there are scales everywhere. Now I know why I have always bought the prepackaged frozen servings!

As much as Uruguay is improving and how I tell people this is a first world country every now and then....I just wonder!

The salmon is fresh. It comes from Chile by air, which is why it is rather expensive.
Your mistake is thinking the person behind the fish counter at Tienda Inglesa is a fishmonger.
They are shop assistants who know how to cut up and wrap things.
Where I live it is usually a woman from the deli section who asks if you want fish and moves over from that section to the fish section.I doubt they have ever scaled a fish.

I hit the ferria in Ciudad Vieja when in MVD and the fish market when in Punta. I have never encountered the problem. Sorry you did; but, I attribute it to Tienda Inglesa which seems to have dropped its standards a bit since being sold out.

The fresh fish, cleaned to my liking has always been one of the A+ food experiences for me in Uruguay. Sorry you had the issue. I will learn from your experience though and will descale my own fish en la parilla.

Yes it is farmed. Chile is the second largest producer of farmed salmon after Norway.
