What are you cooking?

So here in Uruguay food variety is limited although quality is pretty good.

But in these days of staying home I looked at delivery choices for my area; pizza, chivitos, empanadas or burgers from every place and was completely disappointed in the options.

So thought we expats might share the dishes we make at home that aren’t common in Uruguay but can be made here fairly easily? Please contribute regularly if you want.

I will start with pantry/freezer items since shopping is an every 2 week thing now.

frozen shrimp and mussels with frozen mixed veggies with a little bow tie pasta in a Chinese style chili-garlic sauce. Came out great! If anyone needs a real recipe let me know and I will try and figure it out since I don’t use one.

Basically small frozen shrimp and mussels or you could use a bag of the frozen mixed seafood they sell in the supermarket. Sauté up 1/2 an onion in Olive oil, when soft add the frozen veggies.

In another pot add the pasta.
Cover with water by about 1/2 of an inch and add salt. Cook until pasta is al dente. Save the water

Take out as much seafood as you need based upon how many you are. Run under hot water in a sieve to defrost and get off the ice Chrystals that may have formed

Add soy sauce, sesame oil, garlic chili sauce, a bit of ginger powder to veggies. And cook 2 -4 minutes, Add the seafood and raise the temp to high. Stir fry 2 minutes, Add a ladle of the starchy pasta water to make the sauce and then add in the pasta. Combine and allow sauce to reduce into the pasta a bit. Serve

Used one wok and one small pot and serve from the wok so clean up is easy.
