It doesn't sound like Belize would be an option for you. No museums to speak of, very few fancy restaurants, no nightlife other than local bars, and a seriously laid-back lifestyle.

Depends on a lot of things. Do you speak the language? What type of environment are you hoping to live in? Small city, countryside, big city? What type of things are important? Transportation, public or otherwise, cafes, restaurants, outdoor activities. Need more info and we can prob help.
