Vegetarian and Vegan Restaurants

I'm visiting Guatemala next month and I have a special diet (plant-based). This can be a challenge when traveling.

Anyone know of the healthy restaurants in the following areas:

Guatemala City
Antigua
San Antonio
San Pedro
San Marcos

And any others you think are worth mentioning, even if it's on the coast...I'm up for exploring. And any top restaurants in general. Some are able to adjust to meet my dietary requirements.
