Housemaid/cook wanted

I have just bought a house in Marrakech I am going to use it for guests/friends from late summer onwards, I want a housemaid who will clean properly and cook but I do not need her full time I just need her three days per week to go in run the water, small clean however when I have guests for long weekends I want her there full days. What should I pay , any ideas or any recommendations
