Advise please

Hi I would like some advise please, after spending 20 years in Eastern Europe its time to move. We want to move to Spain south area maybe no further north than Murcia. We intend to travel over next January and spend about 4 weeks driving around to get a good look. Now this is where I need some help, we are looking for somewhere that has some life but not a major tourist area, must be by the sea. Is there anyone out there that can give me some areas to visit with the above criteria, so we dont just drive around and achieve nothing. So list is

South of Murcia
by the sea
bars shops restaurants but not over the top
