Doing the pensionado visa application by yourself

I've seen some people say they have done the pensionado visa application by themselves. Looking into what is required, there is a lot I could do myself, like gathering documentation, getting it translated (by someone else)/notorized/apostille and filling out forms. I'd be interested in other's experiences and recommendations. I'm cheap and hate paying for things I can do for myself. I do know there are times where paying an expert is worth it. It will be myself, my wife, an adult daughter and a young one.
