National Visa Requirements

Good day. My wife and I are thinking of living in Italy for five months next year. We know that the National Visa requirements are that one has proof of accommodation, return flights, etc. These requirements apply to Canadians like us and others, no doubt. What I wonder is how do we get proof of accommodation, as required for the visa, if our plan is to get a short-term rental, eg two weeks, so that we can find a longer-term rental? Have others faced a similar challenge? BTW, we are thinking of living in Lucca initially, and then the vicinity once we are comfortable. We hope to study Italian. Any suggestions and insights are welcomed.
