hotel reservations

This might sound like a strange question but, what is the best way to reserve a room in a hotel?
The reason I am asking this is that I have been in contact with several hotels in the area I plan on visiting this August. I was able to make one with not problems, they simply asked for my name, when I need the room and that was that. Another one asked for my passport number because there system required it. Another wanted me to wire money to them.
I'm probably being overly cautious but is this the way that most hotels work?
Since I will be driving, I'm thinking of just going to each town and find a room when I get there.
Any suggestions on this would be appreciated.
