Panamanian cuisine (?????)

On my first visit to Costa Rica, many years ago, I visited two central markets in San Jose, and was entranced with the huge variety of fruits, vegetables, spices, etc on display --- and was looking forward to experiencing a vibrant CR cuisine -------- which unfortunately never ocurred in the local restaurant scene ------ but SOMEONE must be using all those interesting veggies !!!!!

Is it possible to find interesting local cuisine in local restaurants?

Is it possible to find housekeepers/cooks who will show off their local specialities?
