Making plans to visit!

What is the best way to go about finding a 1-3 month rental? Where would you recommend staying as a base camp for us to explore the country (we don't plan on having a vehicle)? Lastly, any advice on ways to spend as much time as possible interacting with locals? I'm pretty outgoing and have spent time living abroad before so I don't forsee it being much of an issue, but I guess I'm asking if there are any organizations that would be neat to volunteer with, etc. We'd like as many opportunities as possible to practice our Spanish! Thanks for the help
