I enjoy cooking (and eating) using local ingredients.
Fresh tuna is often available at the Boquete Fish Market and the Mercado Publico in David.

You don’t have to be obsessive about the ingredients. If you don’t have it improvise.
I don’t have a grill handy so I used a really hot nonstick skillet. Cast iron would be excellent but I don’t have that either.
I don’t have rice vinegar so I used apple cider vinegar. Next time I might try some cheap white wine. The apple vinegar was somewhat overwhelming.
If you don’t like the taste of ginger leave it out. I don’t particularly like it but I used it as directed and it wasn’t noticeable. I might try some fresh turmeric next time.
We had some leftover so I am saving it for another time.
