Lowkey beachfront resort expat communities?

We hope to find a 2 bedroom beachfront condo to purchase in a relaxing resort community with good amenities (restaurant, bar, gym, communal pool, social space - maybe even golf course access for my husband). Not into the super high rise PC thing though - prefer the feel of something like Red Frog Beach Resort but with just a little bit more (bigger pool, a gym, maybe a second restaurant).

We are thinking the Caribbean side and spending Jan-April/May there, maybe trying to rent out the rest of the year.
