Best Neighborhoods in Valencia

My wife and I plan to stay in Valencia next Spring for 3 weeks. It's a biggish city with many neighborhoods.

We'd like to stay in a neighborhood where we can walk to good transportation, walk to coffee shops, and one where it's not so noisy that sleep would be difficult.

I know this is a hard question to answer, but what would the best neighborhoods to rent in be?
