Places to live in Spain

What areas of Span would you recommend for someone who is a well traveled single woman looking to relocate. I am not a super hot weather lover - I enjoy a more varied climate, and enjoy outdoor activities, gardening, and some culture. I would like easy access to transportation. Not a home, but a comfortable place to live that would be accessible and peaceful. I will likely still be working remotely for a couple of years, so some place that would have easy access to internet service. I am also vegan, so access to foods and other goods that would support my lifestyle.
