Spain: Where to begin

My wife and I will be walking the Camino de Santiago starting late August. We think we have this trip sorted out as there is lots of help on line. Our challenge is the rest of our trip. We arrive in Madrid Aug 19th an want to work our way to St Jean Pied de Port over a few days to get acclimated. What we are overwhelmed with is what to do/see from landing until we start the Camino and then some kind of agenda after we leave Santiago possibly including a day or two in Tangiers. Any suggestions on budget itineraries or where we may look to find suggested budget itineraries/routes for about 45 - 50 days in Spain (30-40 additional days will be on the Camino)? There just seems to be so much to see and it there must be a better way than just watching Rick Steves? We are excited and anxious,
