Moving to Ecuador

We are thinking of moving our family to Ecuador from Niagara Falls Canada. My children are 18 and 19. I would like to know what opportunities are available to them. Is it profitable to open a cafe or hostel and still live well? We were thinking of Cuenca but we are going to travel around for a while before we settle on a place. I would also like to know what the current situation is with Covid rules.
