Scouting Trip/Vacation

My wife and I have a trip scheduled in Sept to visit Cuenca. We travel quite a bit and I've always want to visit Ecuador. Personally I wouldn't mind retiring there but my wife's not so sure so that why we set up the trip. We already have a AirBnB in Cuenca set up for our trip but I would really like to see the coast while we are there. Since we are staying 12 days, would it be possible to fit in Manta for 2 or 3 days or is there enough in Cuenca to fill or 12 days?
