Introductory visits?

We are thinking about renting somewhere in Ecuador maybe for a couple or three months with the hopes of getting to explore the country and get a feeling for the culture, better our Spanish via lessons, and see a country we’ve never been to (and perhaps some neighboring places as well). Any suggestions about good “home bases” for doing this in Ecuador? We are traveling extremely light possession wise, but a safe furnished place would be helpful as we like to settle, cook, and would like to take some language classes…are there locations that make sense more than others for doing some in country travel? Sounds like not all places are super easy to get to. Are places with airports the only options (we aren’t really huge city people so Quito sounds a bit intimidating size wise). I guess this is terribly long winded, sorry!
