Moving to Granada with Children

Hello - This is an initial broad strokes post. We are a family of 4 living in Thailand. We are US citizens. We are planning on moving to the Granada Nicaragua area in 2018 to buy a business. I used to live in Guanacaste Costa Rica and have been to Nicaragua many times in the 90s and early 2000s. My questions are as follows:
1- How do we start establishing residency? In Costa Rica if you could prove you had a certain amount of US dollars per month, you could have residency.

2- Does anybody have any information on raising children in Granada? I have been in touch with the one international school, but it looks like it's only up to 7th grade.

3- Any advice you have for us? We have been teaching for 20+ years and are looking forward to a career change.
