Chef looking to expand

Okay, so I'm a chef (currently working but finishing the degree at the local CC). My dream? Plan? My calling, is to travel the world and learn new cuisines and techniques from chefs the world over. But I've not idea how to get started in one country let alone the multiple countries I'm planning on visiting.

What I'm thinking is I'll go somewhere, find work/mentor and live there for a while (months-years I've got no time table).

Anyone have any ideas/tips that could help me?
