Young married couple looking for advice

Hello.....
My name is James and I am 29 years old and I am working on getting my wife who is 23 excited on starting a life somewhere other then Texas.
I was raised and worked on a medium sized family dairy farm since I was old enough to walk. While farming I lived in Los Angeles California, rural Nebraska and various places in Texas. I spent the last 8 years working as a Paramedic (EMT-P) and riding in the back of an ambulance in a large metropolitan area. I have many years of college but no official degree.
My wife has been a Certified Nurse's Aide (CNA) and has provided long term elderly care in nursing homes for the past 8 years. She has a 2 year Associates Degree in Arts.
I recently quit my job as a paramedic due to my frustration with the American health care system and started working at a bar. My wife still works in the nursing home but is also feeling frustrated with the American system.
I have a small retirement set up for me and if I sell all my possessions I could have about $15,000 saved.
I have an idea of wanting to go to SE Asia or South America. I am thinking with my work experience and my insatiable urge to want to travel and adventure with my wife.
I've also been learning to cook cheap and healthy and I found it to be a newly realized passion of mine.
I am ready to go ASAP. But I have no clue where to go or where to start and I also need help in getting the wife to finally say......"OK lets start packing and get this show on the road"
