my country is not Home anymore

I'm an American citizen and do not feel that this place is the best for my family of 4 (me, husband, 2 yr old daughter, 4 yr old son with slight socio - emotional problems). We are not affiliated with an organized religion. We own an urban house, two cars and a small dog. We both hold BA in a liberal art and I owned a small shop that's closing soon.

I have wanted to leave for a long time, but finding the right country is difficult.
I have exhausted all liquid assets in the store, and finding work is difficult here in upstate ny. We are not interested in the USA, and wish to find work as teachers of English, subsistence farmers, or with an agency that helps children our animals (school, orphanage, animal preserve, etc).

Is there anyone out there who knows where a pioneer family might feel physically safe, have access to education and begin a new life (a bit like our ancestors that came to this country generations ago)? Our credit is poor and the only money we'd have to move with is what we get for our modest life (about $35-40,000)?

I'd need a garden to grow food (less expensive than buying), access to clean drinking water, some tv maybe and the ability to have separate bedrooms for my children.
