Need advice about making advance reservations.....

Hi!

Husband and I are traveling throughout Panama November 5 - November 19. We have all of our plans booked up to November 12. On November 12 we will pick up a rental car in David and work our way east with stops in:

1) Las Lajas
2) Santa Catalina
3) Pedasi

Our situation is that once we have the rental car, we'd like to not make advance reservations for lodging because we won't know how long we want to stay in each town. However, my concern is that if we DON'T make advance reservations, we could be left with nowhere to sleep.

We prefer to stay in B&B's near/on the beaches. Can anyone give me some advice on whether we will be able to find places to stay without advance reservations during 11/12 - 11/18? Are there enough places to choose from? Do B&B's in these beach towns fill up fast?
