Looking for potential destinations - two and a toddler

Hi I wonder if you could help? I'm looking into potential destinations for my husband, myself and our toddler as we've reached a point where we're fairly able to ditch everything and move to a new location to start a new adventure (subject to selling the house of course!)

We'd like somewhere where English is widely spoken at least initially until we find our feet a little; where there is a good quality of life; plenty of easy access to scenery to walk in; good education options for younger children and somewhere which doesn't work out too expensive after taking into consideration cost of wages/living expenses.

Job wise we haven't started looking yet but my husband is a programmer and could work from home on UK contracts if local employment wasn't immediately available, I'm an administrator that is willing to change careers but would like to be able to be a SAHM for a couple of years if we could financially afford it.

I would love to know what places you would recommend and what your experiences have been?
