Best freedom loving place to get citizenship through birth tourism

I'm from Canada, currently pregnant with my third child and thinking about doing a tourism birth to get citizenship in a more freedom loving country so we have an option if things get worse in canada and we need to get out.

I've thought about Costa Rica. Any other places recommended? We'd like a warm climate that would not go into extreme lock-in or mandate vaccines in the event of another "pandemic".
Does anyone have suggestions or experiences on doing birth toursim? Would we also be able to get citizenship for our two other children?
