Country that allows for the most freedoms?

We currently live in Texas, USA. Offically, we have a lot of freedom, but it's only surface layer freedom. There's a lot of risks to being here. The government is becoming more hostile. We are a bit atypical because we homeschool and choose alternative healthcare. We also have 4 kids. I'm a bit concerned that at some point we could be targeted by our government. You just never know. One nosy neighbor saying you let your kids play in the fenced backyard without being out there and you could get in trouble even though, that isn't really dangerous... or asking for a second opinion at the hospital if your kid is sick and they might just take your child away. It's getting ridiculous.

Are there any real "free" countries where you can do your own thing and not have to worry the government will destroy your family? My husband is in civil engineering and has a very good resume and 9+ yrs experience. He has a mechanical engineering degree from Romania as he's Romanian. I've considered Romania, but they lack opportunities and I don't know how free they really are either. My kids could become dual citizens because of their father. One already is. So, they would have the possibility of being EU citizens. I'd still be stuck as only American, but yeah. Any thoughts? Is this world just going to crap with all of our freedoms being ripped away from us now? I'd want to continue with homeschooling if we go somewhere else.
