Safety concerns for mother/daughter bus/train/walking vacation

We are looking into visiting Ireland for a 30ish day vacation which is low key, slow paced and yet safe for us- as we are a mother daughter team. I am 54, just received a clean bill of health from annual exam and my daughter 22. Thank heavens, we are both in excellent health. Our goal is to safely travel as inconspicuously as possible.

Our needs are modest- rentals if available should we find a location we want to visit a bit, otherwise home shares, hostels. Our timeline is open. Access to internet is important, as we are college students and able to take online classes during the semester while there. We will bring laptop or tablet, so access is our main issue.
Should medical/insurance needs become an issue, I have already checked into physicians which accept our insurance in Dublin and are accepting new patients. Otherwise would pay out of pocket and file with our insurance (TRICARE).
We eat simply and as cleanly as possible, do not drink but look forward to tea or coffee at the pubs we visit- although my daughter is open to trying a pint or two while there.
