Proofreading & Traveling with my dog

Proofreading is a good job and generally you are self-employed. Most Digital nomad Visas I’ve seen seem to be working for other companies but able to live in another country. As a Proofreader I’d be working for myself, not attached to a company (although the potential to be in-house is there) is it still possible to obtain a Digital Nomad Visa if self-employed?

As I brought my first dog from the UK back to Australia with me, when returning to the EU I’ll have a dog with me. No question of leaving behind. How easy is it to travel the EU with your dog?
