Day by day Hotel booking

Hello

I will be in Costa Rica in 3 weeks for one week. I plan a reconnoitering tour around San José, Alajuela, Guanacaste and Puntarenas to see which areas I'd like to come back to spend more time. I'll have a rental car and will spend the first night in Grecia (not yet booked). Then, I'd like to be able to maintain an open itinerary; that is, I'd like the flexibility of being able to book my hotel day by day using tripadvisor/booking.com. My question is whether that is feasible. Can I count on decent accommodations at a reasonable rate on a day to day basis in late February? Thanks.
