Volunteer work recommendations

My wife and I plan to move down this time next year and are in the process of saving and preparing (improving our spanish, selling our things, breaking our diet and spending habits). There quite a bit of information on Google, too much in fact, so I am hoping to get recommendations for organizations to work with. We are bringing our dog with us, but other than him, just what we can carry. The idea is to start with 3-6 months of service and then decide from there. Any help would be welcome.
